DOC FRIULI EASTERN HILLS
ORGANOLEPTIC CHARACTERISTICS:
White wine with delicate greenish reflections. It is decisive in the aroma that recalls tomato leaf, pepper, sage, mint, white peach, papaya and other exotic fruits, elderflowers and on the palate it manifests a mineral and aromatic character. Full-bodied wine with good acidity.
GRAPES THAT MAKE UP THE WINE AND PERCENTAGES:
Sauvignon 100%.
PRODUCTION AND EXPOSURE AREA:
Vineyards of the Eastern Hills of Friuli; East and North East.
BREEDING SYSTEM:
Guyot & Sylvoz short.
TYPE OF SOIL:
Marly with a balanced clay content and rich in skeleton (flish) with a yield of 0.8-1 kg per plant.
HARVEST TIME:
Manual harvest in crates at the beginning of September.
VINIFICATION:
Soft pressing of the grapes. An aliquot is macerated at cold temperatures (5°C) for 7 – 8 hours. Static decantation of the must at cold temperatures and subsequent decantation to start fermentation at a controlled temperature of 13-14°C.
MATURATION AND REFINEMENT:
Rests on the yeasts until spring (bottling time) and refinement in the bottle for several months.
PAIRINGS:
It goes best with raw and non-raw fish appetizers, first courses, creams and soups, asparagus and fried fish.
SERVING TEMPERATURE: 10° C
