これは開けてから何日か経った時に試飲し撮影したものですが、最初に飲んだ時の美味しさ、感激の余韻が十分に楽しめました。
エネルギー、熱量を感じるよく熟したブドウですが、高い酸を保っています。
シャルドネにしてはかなり酸は高いです。
樽の仄かな風味はあるものの、主役はブドウ！
レモンシャーベットのような柑橘の風味とクリーミィさがあり、余韻が長い(ღ♡‿♡ღ)

ケヴィン・ジョンはワイナリーの創設者名。2004年、オーストラリアのBiological Farmers Association (BFA)よりバイオダイナミクスのAグレード認定を受けた自社畑（カレンヴィンヤード）のブドウを使用。カレンのフラッグシップとなるこのワインは1976～1988年に植えられた樹齢の古い樹から造られています。これらの樹はカリフォルニア大学デービス校のオールドウェンテクローンとしても知られるジンジンクローンで、低収量で最高品質のブドウを生み出します。果実と花の日を含む3週間にわたって収穫され、バイオダイナミック樽、コンクリートエッグ、アンフォラで自然に発酵されます。このワインは35%の新樽で 8ヶ月間熟成させた後、清澄やろ過を行わずに瓶詰めされました。
熟した柑橘類; レモン、ライム、オレンジ。ミネラルとマッチスティックの複雑で洗練されたシャルドネの世界へと導きます。

The 2021 Kevin John is another landmark in the journey of finding the holy grail of great chardonnay with biodynamics, digging deeper to find wines of the land. The 2021 harvest was defined by Covid and staff restrictions for hand harvesting. The low yields ensured that the crop was harvested at optimal condition and ripeness. Bird pressure was high and rain events during the growing seasons and also throughout harvest provided challenges. Harvested across 3 weeks including fruit and flower days and fermented naturally in biodynamic barrels, concrete eggs and amphorae. This wine matured in 35% new puncheons for 8 months before bottling without fining or filtration.
Light straw-yellow hue; a complex bouquet of creamy lees-derived and dried fruit aromas plus biscuity oak and a little toastiness. It's bright and intense in the mouth, delicate and piercing, with intensity allied with superb refinement, a precision chardonnay of superior tension and finesse.
